Yummy Mummies

We're planning a Halloween gathering with my nephews this year. I think it will be super fun, but it's a little daunting - four kids ages 4 and under, plus six adults. Of course there will be candy in abundance, but we'll need something to hold us over and prevent sugar shock. So these cute little pizzas are perfect - everyone can make their own, and they're ready after just a few minutes in the oven. Best of all, they're small enough for the kids to each eat one, and those of us with bigger tummies can have another when we get back from collecting candy. Halloween food problems, solved!

Combine first 2 ingredients; simmer 15 minutes. Cool sauce. Preheat the broiler. Place the English muffin halves cut side up onto a baking sheet. Spoon Mama Mia Marinara Sauce on each one. (Reserve any remaining marinara sauce for other use.) Cut the string cheese into pieces about the same width of the English muffins and then into matchstick slices. Place two olive slices on top of each muffin; arrange string cheese above and below olives to resemble a mummy. Broil 2-3 minutes or until cheese is melted and muffins are browned on the edges. Makes 6-8 servings.

Tips and Hints

  • Mummies can be baked in a 350° oven for 8-10-minutes instead of broiling.
  • Add pepperoni under the cheese for a heartier mummy.
  • Sliced pimento-filled green olives may be used in place of the black olives.
