Sunny Ciambellette Cookies Recipe

Sunny Lemon Pound Cake Mix and a hint of lemon and Sambuca make this a perfect treat for snacking or dunking.

  1. Preheat oven to 350°F. In large bowl, combine Sunny Lemon Pound Cake & Icing Mix packet 1, butter, 2 eggs, lemon zest and Sambuca; mix until well combined and dough is formed.
  2. Roll about 1 tablespoon of dough into a 6-inch log, then form into a ring shape, slightly overlapping the ends. Arrange cookies about 2 inches apart on a parchment paper-lined baking sheet.
  3. Whisk remaining egg and use a pastry brush to lightly coat top of each cookie with egg. Sprinkle coarse sugar on top of cookies.
  4. Bake 13-15 minutes or until set and golden brown. Let cool on pan 1 minute. Transfer to a cooling rack to cool completely.
Makes about 18 cookies. Serving Suggestion:
Enjoy with coffee as a "dunker."
