Mix all ingredients in blender on high speed until smooth. Preheat a crepe pan or an 8" non-stick frying pan over medium heat; hold hot pan above heat and ladle approx. ¼ cup of mixture into pan swirl pan to coat evenly then return to heat cook until edges appear dry (about 30-45 sec.) flip and repeat. Fill with fruit and yogurt and dust with powdered sugar.
Makes 8 crepes
Note: crepes can be made the day before and gently warmed in a microwave just before serving, without sacrificing the taste or texture.
