Combine the first 3 ingredients. Stir in dried apricots and the orange zest. Divide batter between greased muffin tins. Bake at 325° for 20 minutes or until toothpick inserted in middle of muffin comes out clean. Makes about 16 muffins.

Absolutely delicious and super easy to make!These muffins are so good - especially fresh out of the oven and they are so easy to make. Just melt some butter, chop a bag of dried apricots and grate an orange and voila! The only negative is the recipe suggests 20 minutes at 325. They definitely needed another 5 minutes.
