Serve it tonight: Preheat oven to 375°. Combine prepared rice and one can of soup; place in greased 9 x 13 baking dish. Sprinkle with salt and pepper. Layer with artichokes, onions and chicken. In a medium bowl, whisk the remaining can of soup, half and half and dip mix. Spread evenly over the chicken mixture. Top with croutons, cheese and parsley, if desired. Lightly cover with greased foil. Bake 30 minutes; uncover and bake an additional 20-25 minutes. if desired, place under broiler for a few minutes for additional browning. Salt and pepper to taste. Makes 8 servings.
Serve it later: Assemble unbaked casserole in a disposable foil pan; cover with foil and freeze. Thaw completely. Bake as directed above. Suggested sides: Fresh pineapple chunks and steamed broccoli
