Mix all ingredients. Form into patties and drop into hot oil in frying pan. (Add more cracker crumbs if the patties need more consistency.) Fry to a golden brown on both sides. To serve, top warm pancake with dolop of sour cream. Makes 3-4 servings.

Yay for potato pancakes!I had a left over baked potato in the fridge and thought "hey, I'll make potato pancakes with our meal"! I was very happy to find this recipe and was even more pleased on how delicious it work out!
