Combine first 6 ingredients. Form into a meatloaf and arrange bacon crosswise over meatloaf, tucking the ends under the bottom. Wrap in waxed paper and place in a gallon resealable bag. Freeze. Thaw completely, place meatloaf on a grill pan or rack in a shallow, foil-lined pan. Grill over medium-medium low heat 60-75 minutes, until internal temp reaches 160°. Brush with maple syrup during last 5-10 minutes of cooking. Let stand 10 minutes before slicing. Makes 6-8 servings.
Optional - Bake in 350° oven for 75 minutes, brush with maple syrup and bake an additional 15 minutes. Place under broiler if you would like your bacon crispier.
Sides - Fried potatoes and your favorite vegetable.
