Preheat oven to 400°. Lay the strips of bacon in a shallow, foil-lined baking pan; bake for 15 minutes. Bacon will not be completely cooked. Drain and set aside.
Reduce oven temp to 350°. Crack the eggs into a large bowl; add seasonings. Whisk until well blended.
Grease muffin tin with non-stick spray. Place one strip of bacon around the inner wall of a muffin cup; repeat in each cup. Give the egg mixture a final whisk; divide equally into the 12, bacon-lined muffin cups. Sprinkle cheese over tops. Bake for 20 minutes or until a knife inserted in the center comes out clean.
