Preheat oven to 325°. Combine ingredients in a large bowl. Do not over mix; batter will be lumpy. Spread batter into a greased 9 x 5 loaf pan. Bake 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool completely before slicing. Makes about 10 servings.
Lighten it up: Use 6 oz. plain or Greek yogurt instead of butter.
High altitude: Increase water by 2 Tbsp. and add ½ cup flour.
More ways to mix it up:
- Prepare with 2 mashed bananas in place of butter.
- Stir ½ cup peanut butter chips, butterscotch chips or chopped nuts into the batter.
- For 2 mini loaves, reduce bake time by 5-10 minutes.
- For banana cake, spread batter into a greased 8 x 8 baking pan; bake 42-45 minutes. Cool completely. Blend ½ cup canned white frosting with 1/3 cup peanut butter, swirl over cooled cake.
