- Preheat oven to 425°F. Line a large rimmed baking sheet with aluminum foil; place a baking rack on baking sheet. Place bacon slices on baking rack (shingle if needed). Bake 15-20 minutes.
- Remove bacon from oven; turn oven up to 450°F. Brush bacon with half the Bayou Bourbon™ Glaze; bake 5 minutes. Turn bacon over, separating if shingled, and brush with remaining glaze. Continue baking 5 minutes or until bacon is desired crispiness. Remove bacon from rack immediately to keep from sticking.
- Meanwhile, in small bowl, mash avocado with mayonnaise and Onion Onion™ Seasoning. Salt and pepper as desired.
- Spread avocado mayonnaise on tortillas. Top with lettuce, tomatoes and bacon. Roll up, burrito-style; cut in half to serve.

Make ahead & freeze: Place Bayou Bourbon™ Glaze in a quart freezer bag. Place peeled avocado and Onion Onion™ Seasoning in a quart freezer bag. Place both bags and bacon package in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.
