Beef & Onion Vegetable Soup Recipe
Quick and easy soup with ground beef and a package of frozen vegetables....Yum!
- 1 1/2 lbs. ground beef
- 6 cups water
- 3 Tbsp. tomato paste
- 16 oz. bag frozen mixed vegetables, thawed
- 1/2 cup instant rice
Serve it tonight: Brown ground beef in a large soup pan until no longer pink; drain fat. Add next 5 ingredients; bring to a simmer. Cover, simmer 30 minutes; add instant rice. Simmer, covered, for an additional 5 minutes or until rice is tender. Makes 6 servings Serve it later: Prepare soup as directed above (don't add rice). Cool soup completely; place in a large plastic container or resealable plastic bag. Freeze until read to use. Thaw completely; place in a large soup pan. Bring to a simmer; add rice, cook, covered an additional 5 minutes or until rice is tender.
