  • 3 ounces pasta (bowtie, penne, rotini)
  • 2 servings leftover Garlic Seared Steak, chopped
  • 2 cups chopped fresh baby spinach leaves
  • 2 servings leftover Black & Blue Butter
  • ¼ cup shredded Parmesan cheese
  • 1 medium tomato, seeded and chopped

This is a leftover recipe for Garlic Seared Steak with Black & Blue Butter.

  1. Prepare pasta according to package directions. Drain, reserving ¼ cup cooking water. Add pasta and reserved cooking water back to pan; reduce heat to medium.
  2. Add steak and spinach; cook 1 minute. Stir in butter, cheese and tomato; toss to coat with butter until melted. Salt and pepper as desired.

Makes 2 servings.

Work Lunch Suggestion: Prepare step 1. Divide between 2 microwave-safe storage containers. Top with beef, spinach, butter and cheese. Place tomatoes in 2 small storage containers. Refrigerate all containers up to 1 day. Microwave pasta on HIGH 2-3 minutes or until heated through. Add tomatoes and toss to coat with butter.
