Place cooked pasta and bacon in a large bowl. Heat 1 Tbsp. reserved bacon drippings in a large skillet over medium heat. Add spinach and heat until wilted, about 1 minute; add to reserved pasta. Put an additional ½ Tbsp. bacon drippings into the same skillet. Stir in tomatoes and seasonings; cook 2 minutes. Toss with spinach and pasta mixture, adding more bacon drippings if pasta seems dry. Stir in cheese. Chill until served. Makes 12-15 servings.
