Breakfast Bake with Bacon & Egg Nests Recipe

  • 1 (8 ounce) package cream cheese
  • 1 (24 ounce) package refrigerated prepared mashed potatoes (about 2½ cups)
  • ½ cup milk
  • ¼ cup sour cream
  • 8 slices thick-cut bacon, cooked but not crisp
  • 8 large eggs
  • Chives, shredded Cheddar cheese, sour cream, optional

  1. Preheat oven to 400°F. In a large microwave-safe bowl, microwave cream cheese on HIGH 30-45 seconds or until soft; stir until smooth. Mix in next 4 ingredients; spread evenly into a greased 13x9-inch baking dish.
  2. Using the back of a spoon, make 8 wells in the potatoes for the “nests”. Form each bacon strip into a ring and place into the nest.
  3. Bake 10 minutes. Remove from oven and crack an egg into each nest; return to oven and continue baking 10-15 minutes or until eggs are set and desired doneness.
  4. Top with garnishes of choice; serve immediately.

Makes 8 servings.

Make Ahead: Prepare through step 2 without baking. Refrigerate, covered, up to overnight. Preheat oven to 400°F; remove dish from refrigerator and let stand at room temperature 30-60 minutes before continuing with step 3.
