- Preheat oven to 400°F. In a large microwave-safe bowl, microwave cream cheese on HIGH 30-45 seconds or until soft; stir until smooth. Mix in next 4 ingredients; spread evenly into a greased 13x9-inch baking dish.
- Using the back of a spoon, make 8 wells in the potatoes for the “nests”. Form each bacon strip into a ring and place into the nest.
- Bake 10 minutes. Remove from oven and crack an egg into each nest; return to oven and continue baking 10-15 minutes or until eggs are set and desired doneness.
- Top with garnishes of choice; serve immediately.
Makes 8 servings.
Make Ahead: Prepare through step 2 without baking. Refrigerate, covered, up to overnight. Preheat oven to 400°F; remove dish from refrigerator and let stand at room temperature 30-60 minutes before continuing with step 3.
