Buffalo Chicken Chili Recipe
This big-batch chili is a real crowd pleaser ... perfect for game day or family gatherings.
- 4 cups low-sodium chicken broth
- 2 cups cooked chicken
- 2 cans navy beans, drained and rinsed
- 2 (14 ounce) cans diced tomatoes
- 15 ounce can corn, drained
- 1 cup sour cream or plain Greek yogurt
- Corn chips
- Crumbled blue cheese, optional
- Slow Cooker
Whisk first 5 ingredients together in slow cooker. Add chicken, beans, tomatoes and corn; stir. Cover and cook on high 4 hours or on low 6-8 hours. One hour or so before serving, place sour cream in a bowl; add 1 cup of broth from slow cooker; stir. Add to slow cooker; stir. Heat through. Serve topped with corn chips and blue cheese crumbles.

Unfortunately they don't make the buffalo dip mix anymore so I used the Bold Buffalo Bleu Cheese dip mix. I also used 3 cups of broth instead of 4. 4 would have made the chili very runny. I also added celery because I'm a sucker for cooked celery.

After making this once it's the only chili made in our house. We do increase the amount of chicken and make it with fiesta dip mix, but other than that, this is a family favorite where left overs are fought over!

It really did taste like buffalo chicken dip as a soup. Yum! The sour cream gave it a rich, creamy consistancy and the blue cheese was a nice addition/topper.

Halved the broth, beans, and tomatoes, followed the rest of the measurements and made mine on the stove in 30 minutes. My 6 year old said, "Best chili ever!" I added a little extra sour cream to his to lessen the impact of the spice.
