Chicken & Veggie Power Salad Recipe

This quick and easy chicken salad is lower in carbs, dairy- and grain-free and is packed with superfood veggies.

  • 4 cups shredded cooked chicken breasts
  • 2 (10 ounce) packages power blend superfood slaw mix or broccoli slaw mix
  • 1 red bell pepper, diced
  • 1½ cups fresh sugar snap peas, trimmed, cut in half
  • ½ cup 14-Day Reset dressing of choice


Note: This recipe uses one of the following 14-Day Reset recipes: Citrus Herb Vinaigrette, Fresh Tomato Dressing or Orange Avocado Dressing.

  1. In large bowl, combine first 4 ingredients.
  2. Add dressing of choice. Toss to coat well.
  3. Let stand 10 minutes before serving.

Makes 6 servings.
