Chipotle Potatoes Recipe
Delicious potatoes with a kick of chipotle - an easy side dish for any grilled meat.
- 2 lbs. red potatoes
- 1 Tbsp. olive oil
Preheat oven to 350°. Cut up red potatoes into 1-inch chunks and place in a resealable bag. Add olive oil and Chipotle Seasoning; shake until potatoes are well-coated. Place on greased baking sheet and bake for 25-30 minutes. You could also wrap in foil and grill for over medium heat 25-30 minutes.

Rated 4 out of 5 by tsconvert from Hot Hot Hot...but oh so good I'm a middle of the road spice girl....chili powder is as daring as I usually get but at the request of the guys in the family I made the Chipotle Potatoes for supper - paired with the Bayou Bourbon Chicken and corn. I have to be honest and say that the sweetness of the corn was my saving grace because the Chipotle was too hot for me...however the guys thought they were absolutely delicious and requested I make more. So overall it was a Win Win

I added roasted garlic infused oil in place of regular olive oil and put the oil in a 9x13 pan. I sprinkled the oil in the pan with chipotle seasoning in the oil and put the cut red potatoes in the oil 'meaty' part down. I then seasoned the potatoes with more chipolte seasoning, sea salt, and pepper. Baked them for 20 mins at 375. Took them out of the oven and flipped them so the skin was down and baked it for another 15-20 mins. It came out very good and I liked the added garlic flavor from the oil.
