Preheat oven to 400°. Combine Packet 1 with water and 2 Tbsp. of cinnamon sugar from Packet 2; blend well. Divide batter evenly among 34 paper-lined mini muffin cups. Bake 9-11 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing.
Combine softened cream cheese, powdered sugar, 3 Tbsp. cinnamon sugar from Packet 2 and 2 Tbsp. maple syrup. Frost the tops of muffins with icing. Sprinkle with cinnamon sugar from Packet 2, top with chopped bacon and drizzle with a little maple syrup.
