Cinnamon-Sugar Pound Cake Cubes Recipe

  1. Preheat oven to 325°F. Prepare Absolutely Almond Pound Cake Mix as directed on package, with melted butter and water. Spread batter in a greased, 9x5-inch loaf pan. Bake 55-60 minutes or until toothpick inserted in center comes out clean; remove from oven and allow to cool completely. Remove cooled cake from pan. Cut into roughly 1-inch cubes.
  2. In a medium bowl, thoroughly mix sugar and cinnamon; set aside.
  3. In a large skillet over medium heat, melt 2 tablespoons butter. Add about half the pound cake cubes to the skillet and toast, turning cubes carefully until all four sizes are golden brown.
  4. Immediately add toasted cubes to the sugar mixture and toss gently to coat. Remove from sugar mixture and repeat with remaining pound cake cubes.
Makes about two dozen squares.
