Preheat oven to 350°. Grease a 9 x 5 loaf pan; add 1 Tbsp. cinnamon sugar from Cinnamon Muffin Melt Mix™ Packet 2. Rotate and tap pan all around to coat. Combine Cinnamon Muffin Melt Mix™ Packet 1 with water; mix until combined. Transfer to loaf pan. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Remove from pan; cool.
Meanwhile, combine berries, Rhubarb Strawberry Fruit Spread, lime juice, lime zest and cornstarch in a medium saucepan over medium heat. Bring to a boil; reduce heat and simmer 10 minutes or until thickened and hot. Remove from heat and stir in mint leaves. Let cool.
Heat a flat skillet over medium-high heat. Slice loaf into 10 slices. Brush each side with melted butter and sprinkle with desired amount of cinnamon sugar from Packet 2. Place slices on hot skillet. Cook 1-2 minutes per side or until golden brown.
Cut slices in half diagonally. Place 2 toast points on each dessert plate. Top with mixed berry compote and ice cream, if desired. Makes 10 servings.
