  1. In large saucepan or Dutch oven, heat Avocado Oil over medium high heat. Add chicken, peppers and onions; sauté 5-6 minutes.
  2. Stir in curry paste. Cook 1 minute.
  3. Add remaining ingredients. Bring to a simmer; reduce heat and simmer 15-20 minutes. Salt and pepper as desired.
Makes 6 servings.

Serve over Herbed Cauliflower Rice recipe.
