Creamy Reuben Soup Recipe
If you're a fan of reuben sandwiches then get ready to try this delicious and creamy reuben soup - yum!
- 6 cups water
- 2 cups shredded Swiss cheese, plus additional for garnish if desired
- 8 oz. corned beef, chopped
- 16 oz. can sauerkraut, drained
- 2 cups milk
- Black pepper to taste
Whisk soup mix into water in a large saucepan; bring to a simmer. Simmer, uncovered, 30 minutes, stirring occasionally. Add shredded cheese, corned beef, sauerkraut and milk. Stir well to blend and heat until warmed through. Season with pepper to taste. Serve with croutons, toasted Multi-Grain Beer Bread and/or a sprinkle of Swiss cheese if desired. Makes 6-8 servings.

I could not find shredded Swiss, so I used mozzarella, and it was totally fine. I didn't even use all of the cheese, 2 cups seemed like a lot.
