Whisk soup mix into water in a large saucepan; bring to a simmer. Simmer, uncovered, 30 minutes, stirring occasionally. Add shredded cheese, corned beef, sauerkraut and milk. Stir well to blend and heat until warmed through. Season with pepper to taste. Serve with croutons, toasted Multi-Grain Beer Bread and/or a sprinkle of Swiss cheese if desired. Makes 6-8 servings.
