Serve it tonight: Preheat oven to 375°. Combine ingredients in a large bowl. Gently roll mixture into 20 balls and place in greased muffin pans. Bake 20-25 minutes. Salt and pepper to taste.

Freeze it for later: Combine ingredients in a gallon resealable freezer bag. Gently roll mixture into 20 balls; place each in a paper muffin liner. Place liners in a gallon resealable freezer bag, separating layers with wax paper. Seal well, label and freeze. Thaw completely. Bake, in a muffin pan, as directed above.

Serve with spaghetti squash and a garden salad.

Rated 5 out of 5 by from Add Quinoa to these Delicious Meatballs I never have 1 1/2 lbs of beef, so I used my 1lb beef and added 1/2 cup cooked quinoa and it was EXCELLENT! Same cook time and ingredients except I used a tsp of Onion Onion instead of real onion.
