Preheat oven to 400°. Grease 9 x 13 baking dish; set aside. Combine breadcrumbs and Fiesta Party Dip Mix in a shallow dish; set aside. Beat eggs in a separate bowl; set aside. Cut filets into ¾” thick strips – about “fish stick” size. Create a step-by-step assembly line as follows: fish, breadcrumb mix, eggs and greased dish. Double bread the fish by first coating each fish stick in the crumb mixture, then in eggs, and again in the crumbs. Place breaded fish in the greased dish. Bake about 10-12 minutes, or until fish flakes easily. Assemble your tacos using a tortilla, 3-4 pieces of fish, Giddyup Guacamole, fruit salsa, lettuce and cheese. Squeeze a lime wedge on your taco for an added punch of flavor.
