Preheat oven to 400°F. Brush 1 tablespoon Roasted Garlic Infused Oil on flatbreads. Place on a large baking sheet. Divide cheese between flatbreads, sprinkling to within ½-inch of the edges; set aside.
In a large skillet heat remaining 1 tablespoon Roasted Garlic Infused Oil over medium-high heat. Add mushrooms, fresh herbs and desired amount of Garlic Pepper Seasoning. Sauté 3-5 minutes. Let cool slightly, and divide between flatbreads.
Bake 8 minutes or until cheese is melted. Slice and serve.
