Giddyup Veggie Salad Recipe

  • 3 tsp. water
  • 3 Roma tomatoes, diced
  • 1 avocado, diced
  • 15.5 oz. can black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • ¼ cup cilantro, chopped

Add water to Giddyup Guacamole Mix; stir to combine. Add remaining ingredients. Refrigerate until ready to serve. Makes 4 servings.

I wanted to do something totally different for my re-launch of my Tastefully Simple business, and decided that I wanted to find out more about recipes that family and friends with dietary restrictions and such could also enjoy! I can't tell you how impressed my guests who were Vegan/Vegetarian were about this salad! It was so fresh tasting, and really was a unique way to show that even something as simple as a guacamole mix can be used to make a simple and tasty dish that is so much more! The whole bowl of this was gobbled up by my guests, and I'm so pleased that Giddyup Guacamole is back so I can make it all summer long!
