Halloween Tiny Cheesecakes Recipe

These tiny cheesecakes are spectacularly delicious and fun to decorate!

  • 1 package BOGO Luscious Lime Cheesecake Bar Mix
  • 1 cup butter (½ cup softened, ½ cup melted)
  • 2 (8 ounce) packages cream cheese, softened
  • Gel food coloring
  • Edible monster eye candy
  • White chocolate chips
  • Black decorator icing with decorating tip
  • Halloween sprinkles, optional

  1. Preheat oven to 350°F. In medium bowl, combine Luscious Lime Cheesecake Bar Mix packet 1 and ½ cup softened butter. Mix until crumbly. Evenly press dough into each well of Silicone Bar Pan. Place on a baking sheet and bake 15 minutes. Cool slightly.
  2. Reduce heat to 325°F. In large bowl, vigorously stir softened cream cheese until smooth. Add Luscious Lime Cheesecake Bar Mix packet 2 and ½ cup melted butter. Stir until well combined.
  3. Divide batter into three bowls. Use gel food coloring to color one bowl green, another orange and the third can be as-is. Spread over cooled crust. Bake 30-35 minutes or until cake is set but still slightly wobbly in center when pan is gently shaken. Cool at room temperature 30 minutes. Refrigerate 1 hour or until completely cooled.
  4. Decorate your white cheesecakes with melted white chocolate and monster eyes to create mummies. Use the monster eyes and black icing for a cute Frankenstein and use the black icing to make pumpkin faces.
Makes 16 servings.
Note: Use the gel food coloring to create any color Halloween monster you like!
