  • 14.5 oz. can diced tomatoes, undrained
  • 13.5 oz. can coconut milk
  • 1 packet Red Bell Pepper Hummus Mix
  • 1 lb. red potatoes, cubed
  • 3 cups cubed butternut squash
  • 2 cups sliced carrots (½-inch thick)
  • 15 oz. can garbanzo beans, rinsed and drained
  • 4 cups fresh spinach leaves

Combine tomatoes, coconut milk, Red Bell Pepper Hummus Mix and Garlic Pepper Seasoning in a 4-quart or larger slow cooker. Add potatoes, squash, carrots and beans. Cook on high 4-5 hours or until potatoes are soft. Stir in spinach and continue cooking 15 minutes.

This sounded pretty good, and I had all the ingredients, so I gave it a try. SO good! I didn't even offer to send the leftovers home with her because I wanted to save them for myself!

Rated 1 out of 5 by from Not a favorite The picture of this recipe looked SO good, and I LOVE trying new things with my TS to You Subscription. This was NOT a favorite, by any means. My Husband and I managed to eat it for dinner last night. Mostly because it was made, and I wasn't making another meal. My 8-year old Daughter took one bite, and said, "this is horrible". She grabbed herself something else to eat. Won't be making this again.

Rated 5 out of 5 by from Vegetarian dinner made simple! The issue I have with many vegetarian recipes is the time needed to prep the the ingredients. What I love about this recipe was the TRUE 15 minutes it took to prepare it! The flavor of the Red Bell Hummus Mix was perfect when mixed with the coconut milk!
