Pour 1 1/2 tablespoons Roasted Garlic Infused Oil in an oven-safe dish; add potatoes. Bake at 400° for 15 minutes. In large mixing bowl whisk together next 8 ingredients. Heat remaining Roasted Garlic Infused Oil in large skillet over medium-high heat; pour egg mixture into skillet. Stir gently until eggs are set.
Remove potatoes from the oven; layer the eggs over the potatoes and top with cheese. Return to the oven and broil 5-7 or until cheese melts. Let cool for 10 minutes. Makes 4-5 servings.
