- Preheat oven to 350°F. Line a greased 9x5-inch loaf pan with parchment paper, letting extra hang over sides. Prepare Luscious Lime Cheesecake Bar Mix packet 1 according to package directions; press all of the mixture into bottom of loaf pan. Bake 15 minutes. Cool slightly.
- Reduce oven to 325°F. Prepare Luscious Lime Cheesecake Bar Mix packet 2 according to package directions. Pour over prepared crust. Bake 30-40 minutes or until cake is set 3 inches from edge but still wobbly in center when pan is gently shaken. Remove from oven and cool 30 minutes.
- Meanwhile, in medium bowl, using an electric mixer, beat whipping cream until stiff peaks form. Set aside. In large bowl, beat remaining package softened cream cheese until light and fluffy. Beat in raspberry sauce until well combined. Fold in whipped cream. Evenly spread over cooled cheesecake (pan will be very full).
- Refrigerate, uncovered, until thoroughly chilled, at least 4 hours. Carefully run a knife around edges of pan. Using the parchment paper, remove cake from pan. Slice. Garnish with fresh raspberries, mint leaves and lime slices, if desired.
Makes 14 servings.
