ingredients

  • 2 pounds boneless pork shoulder roast, cut into 4 sections
  • 1 (14.5 ounce) can reduced sodium beef broth
  • 1 (16 ounce) package colored mini sweet peppers
  • 1-2 cups shredded mozzarella cheese
  • Fresh toppings, such as low-fat plain Greek yogurt, chopped avocados, chopped tomatoes, sliced jalapeños and chopped cilantro

  1. In a large slow cooker, combine pork, Southwest Slow Cooker Sauce Mix and beef broth.Cook on LOW 6-8 hours or HIGH 3-4 hours. Remove meat from slow cooker; shred pork.
  2. Preheat oven to 400°F. Cut each pepper in half; remove the seeds.  Place on a baking sheet. Fill peppers with shredded meat; sprinkle with cheese.
  3. Bake 8-10 minutes, until cheese is melted. Garnish with fresh desired toppings.
