Combine first 2 ingredients; set aside. Saute next 2 ingredients in olive oil over medium heat in a skillet; about 4 minutes. Add egg mixture; cook to set. Sprinkle with Bacon Bacon and cheese; fold in half. Place on a plate; top with Corn, Black Bean Salsa, sour cream and cilantro. Makes 1 serving.
