Preheat oven to 400°. Combine all ingredients except parsley in a large bowl. Toss to coat. Transfer to a large baking sheet. Arrange in a single layer. Bake 20 minutes or until carrots are tender. Remove from oven and toss with parsley. Serve immediately.
