In a large saucepan, whisk Perfectly Potato Cheddar Soup Mix into water and beer; add Bacon Bacon. Simmer over low heat 30 minutes or until thick and potatoes are tender, stirring occasionally. Stir in 1 1/4 cups cheese. Ladle into bowls; top each serving with cheese and Bacon Bacon for garnish, if desired. Makes 6 servings.
