Pesto Arugula Salad Recipe

ingredients

  • 3 tablespoons Avocado Oil
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 (5 ounce) container arugula leaves
  • ½ cup crumbled goat cheese
  • 1 medium shallot, thinly sliced
  • ⅓ cup pine nuts, toasted, optional
  • 18 grape tomatoes, sliced
  • Fresh cracked black pepper

  1. In small bowl, whisk together first 4 ingredients.
  2. Place arugula in large bowl; toss with vinaigrette. Divide among 6 plates.
  3. Top salads with remaining ingredients.
