Pesto Chicken Panini Recipe

  • 1 cup leftover Pesto Chicken Stuffed Shells filling
  • 4 slices hearty bread of choice
  • 1 cup fresh spinach leaves, optional
  • 2 slices provolone cheese
  • 1-2 tablespoons butter

This is a leftover recipe for Pesto Chicken Stuffed Shells.

  1. Place pesto chicken filling in a microwave-safe dish. Microwave on HIGH 1 minute; stir. Spread filling on 2 slices of bread.
  2. Top with spinach, cheese and remaining bread. Spread outside of bread with butter on both sides of sandwich.
  3. Place sandwiches in a preheated panini press, panini pan or skillet. Cook to desired doneness, turning over halfway if in pan or skillet, pressing down as cooking, about 3-4 minutes.
