- Preheat oven to 425°F. In small bowl, combine first 3 ingredients; mix until well combined. Set aside.
- Place bread slices on large baking sheet. Brush with half the Roasted Garlic Infused Oil. Turn over and brush with remaining oil. Bake 6-7 minutes or until light golden brown. Cool.
- Spread crostinis with cheese mixture. Top with Rhubarb Strawberry Fruit Spread, arugula leaves and prosciutto.

Make ahead: Prepare through step 2 up to 1 day ahead. Cover and refrigerate cheese and store crostinis in an airtight container.
