This recipe requires Create Magic Pulled Pork recipe.

  1. Place potatoes on a large microwave-safe plate. Pierce each potato 2-3 times with a fork. Microwave on HIGH 3-4 minutes or until potatoes are tender in center when pierced with a fork.
  2. In large skillet, heat oil over medium-high heat. Add potatoes and smash flat with back of spatula. Add peppers, Magic Chicken Original Seasoning Blend and Rustic Herb Seasoning. Cook 4-5 minutes, turning occasionally. Add pork and continue cooking until nicely browned, about 3-4 minutes, turning occasionally.
  3. Meanwhile, in a medium skillet, heat butter over medium heat. Crack eggs into skillet. Salt and pepper as desired. Cook 1-2 minutes or until whites are set. Using a spatula, carefully turn eggs over and cook until desired doneness, about 1-2 minutes for over easy.
  4. Serve hash topped with cheese and eggs.
Makes 6 servings.

Serve with fresh fruit.

Wine Pairing: Sparkling Wine or Prosecco

Make Ahead & Freeze: Prepare step 1. Cool completely. Smash potatoes and place in a gallon freezer bag with peppers, Magic Chicken Original Seasoning Blend and Rustic Herb Seasoning. Place pork in a quart freezer bag. Place cheese in a quart freezer bag. Place all bags in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 2.
