Quick Coq au Vin Recipe

  • 6 chopped strips bacon
  • 1 chopped medium onion
  • 8 oz. sliced mushrooms
  • 1 Tbsp. butter
  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth

Fry bacon until crisp. Add onion and mushrooms; sauté over medium heat until onions are tender. Move vegetables and bacon to side; add butter. Brown chicken on each side. Add Merlot Sauce and chicken broth; bring to boil. Reduce heat to simmer, cover; cook chicken for approximately 25 minutes. Serve with garlic mashed potatoes. Makes 4 servings.

Rated 5 out of 5 by from THIS is AMAZING!!!! WOW! I can't believe how easy and delicious this was! My family devoured it and are already asking when we can have it again. Yeah! The only change I made to the recipe was adding the Tastefully Simple Garlic Pepper. I sprinkled it on the chicken breasts before cooking them and sprinkled some on the mushrooms and onions as well. I also removed the crispy bacon before adding the onions and mushrooms. PLEASE keep the Merlot Sauce in the line!
