  • 3 cups cooked quinoa
  • 1 can Black beans, drained and rinsed
  • 1 large mango peeled and diced
  • 1 Red Bell Pepper diced
  • 2 TBSP Cilantro, chopped
  • 2 TBSP Mango Balsamic Vinegar of Modena

Prepare Quinoa in Microwave rice cooker. Cool slightly and toss with all ingredients. Serve as a lunch salad or side dish for dinner.
