Raspberry Chipotle Quesadillas Recipe

  • 2 teaspoons vegetable oil
  • ½ cup sliced onions
  • ½ cup sliced bell peppers
  • 1½ tablespoons OR 1 Dinner Mixers packet Garlic Garlic Seasoning
  • 2 leftover Raspberry Chipotle Glazed Burgers, chopped
  • 2 large burrito-style flour tortillas
  • ⅔ cup shredded Monterey Jack cheese
  • Toppings such as shredded lettuce, chopped tomatoes, guacamole, sour cream, salsa

This is a leftover recipe for Raspberry Chipotle Burgers.

  1. In large skillet, heat oil over medium-high heat. Add onions, peppers and Garlic Garlic Seasoning. Sauté until softened and slightly browned, about 4-5 minutes. Add chopped burgers; continue sautéing until heated through.
  2. Divide mixture between tortillas on one-half of each tortilla; top with cheese. Wipe out skillet and return to heat.
  3. Fold tortillas in half and place in hot skillet. Cook until golden brown on both sides, about 3-4 minutes. Cut into wedges and serve with desired toppings.
