Red Pepper Hummus Dip with Veggies Recipe

ingredients

  • 1 (15 ounce) can garbanzo beans, rinsed and drained
  • 1 cup non-fat plain Greek yogurt
  • 1 packet Red Bell Pepper Warm Dip Mix
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 12 small empty baby food jars, optional
  • Assorted fresh vegetables such as: carrots, celery, broccoli florets, cauliflower florets, cherry tomatoes, radishes, sweet bell peppers, cucumbers

directions

  1. In food processor or blender, combine first 4 ingredients. Process until smooth. Drizzle in olive oil until creamy and smooth. Salt to taste.
  2. Transfer to a container and refrigerate, covered, until ready to serve, up to 2 days.
  3. Divide hummus among baby food jars, if desired. Serve with assorted vegetables.
Makes 12 servings.
