Beat eggs and milk together. Heat 1 tablespoon oil on griddle. Dip slices of bread into egg mixture; place on griddle. Cook each side until egg has set, 1-2 minutes; remove from griddle. Place half of the cream cheese on top of one slice of prepared French toast. Spoon half of the Rhubarb Strawberry Fruit Spread on top of cream cheese. Top with second slice of French toast. Drizzle top with melted butter; sprinkle with powdered sugar. Garnish with whipped cream and a strawberry. Makes 2 servings.
