In a medium bowl combine flour, sugar, baking powder and salt; mix well. In a small bowl combine milk, oil and egg; beat well. Add to flour mixture all at once, stir just until dry ingredients are moistened (batter will be lumpy). Pour into greased muffin tins until 1/2 full. Place 1/2 teaspoon Rhubarb Strawberry Fruit Spread on each muffin before baking. Press into the batter. Bake at 400° for 20-25 minutes or until toothpick comes out clean.
Makes 12 muffins.
