Rhubarb Strawberry Pound Cake Recipe

Rhubarb Strawberry Fruit Spread swirled into rich, buttery Absolutely Almond Pound Cake with some fresh rhubarb. Delish!

Preheat oven to 325°. Stir together the first 4 ingredients in a medium bowl. Pour batter into a greased 9 x 5 loaf pan. Dollop spoonfuls of fruit spread on top, and swirl with a knife to create a marbled effect. Bake 55-60 minutes. Cool completely before slicing. If desired, serve with whipped cream and sliced strawberries.

Rated 5 out of 5 by from AMAZING Dessert for ANY Occasion! This was a delicious dessert and could be served in many ways, made in a regular loaf pan or in the silicon mini bar pan. I'll be continuing to use this recipe as my go-to for the absolutely almond pound cake from now on as long as I can get my hands on the rhubarb. The sweetness of the cake meant that I didn't have to sweeten the rhubarb. It was to-die-for and I could eat the whole loaf alone easily!!

Rated 5 out of 5 by from So delicious! I love the combination of these two products! I have also used an alternative method: Pour half of the batter into a loaf pan. Spoon the Rhubarb Strawberry Fruit Spread into the middle & spread to within 1 inch of the sides. Pour the remaining batter over the top & bake according to the directions on the cake package. When you slice the cake, it appears to be a filled cake vs. a swirled cake.
