Rustic Herb Ham and Lentil Soup Recipe
A comforting and hearty bowl of goodness. Great the next day, too!
- 1 lb. bag dried brown lentils, sorted and rinsed
- 2 cups chopped carrots
- 2 cups chopped celery
- 2 (32 oz.) cartons beef broth
- 6 oz. can tomato paste
- 2-3 cups diced ham
- 2 (14.5 oz.) cans vegetable broth (optional)
- Salt and pepper to taste
- Slow Cooker
Combine first 8 ingredients in a large greased slow cooker. Cover; cook on low 5-6 hours. Add ham and vegetable broth if desired; season with salt and pepper to taste. Cook 30 additional minutes or heated through. Tip: 1 capful equals about 2 Tbsp. Onion Onion and Rustic Herb Seasoning.
Rated 5 out of 5 by MamaJo from Wow - Terrific Soup! I made this soup for dinner last night, and not only did I love it, but my husband did, too! It's a nice hearty soup, perfect for a winter night. I made it just as the recipe says, and used the full three cups of ham, which made it nice and meaty, and added the vegetable broth at the end, since over the five hours of cooking, it had absorbed pretty much all of the original liquid. I made the Perfect Parmesan Cheese Biscuits to go with it, it was a delicious dinner. It makes a lot of soup, so we had it for dinner, with a big bowlful of leftovers and another nice big bowlful for the freezer. Highly recommend!
