Rustic Pesto Pork Sandwiches Recipe

  • 2 tablespoons water
  • 1½ tablespoons olive oil
  • 1 tablespoon grated Parmesan cheese, optional
  • 1/3 cup mayonnaise
  • 4 leftover Rustic Pork Tenderloin cutlets (see recipe link in directions)
  • 2 hoagie or bratwurst buns, toasted
  • Shredded green leaf lettuce
  • Tomato slices

This recipe uses leftovers from the main dish recipe: Rustic Pork Tenderloin.

  1. In small microwave-safe bowl, combine first 3 ingredients. Microwave on HIGH for 30 seconds; stir in Parmesan and let stand 5 minutes. Stir in mayonnaise.
  2. Microwave pork 1-2 minutes or until heated through.
  3. Spread toasted buns with desired amount of pesto mayonnaise. Top with pork cutlets, lettuce and tomatoes.

Makes 2 servings.

Work lunch suggestion: Prepare step 1; divide between 2 small storage containers. Place buns, lettuce and tomatoes in separate small bags. Refrigerate all up to 2 days. Continue with step 2.

Tip: Save any remaining pesto mayonnaise for another use. Refrigerate up to 1 week.
