Shallot Tarragon Egg Salad Sandwiches Recipe
This egg salad sandwich will satisfy your hunger for an old classic - with a twist.
- ½ cup mayonnaise
- 2 teaspoons white wine vinegar
- 8 hard-boiled eggs
- 12 slices bread or 6 pita bread havles
- 6 lettuce leaves
- 6 radishes, thinly sliced
Combine first 3 ingredients. Stir in eggs. Salt and pepper to taste. Assemble sandwiches with lettuce leaves, egg salad mixture and radishes. Makes 6 servings.

I added 10 eggs because our house loves hard boiled egg taste. Also didn't have white wine vinegar, so used red wine vinegar. Was still delicious
