Shrimp Po'boy Sandwiches Recipe

Use leftover Pesto & Shrimp Pasta as the basis for a Po’ boy par excellence!

  • 1/3 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 2 servings leftover sauteed shrimp from Pesto & Shrimp Pasta recipe (see link to recipe in directions)
  • 2 bratwurst or hoagie buns, toasted
  • Tomato slices
  • Shredded leaf lettuce

This recipe is made from leftovers from the Pesto & Shrimp Pasta recipe.

  1. In small bowl, combine first 3 ingredients.
  2. In microwave-safe dish, microwave shrimp on HIGH 1 minute or until heated through.
  3. Spread toasted buns with mayonnaise mixture. Top with shrimp, lettuce and tomatoes.

Makes 2 servings.

Work lunch suggestion: Prepare step 1. Divide between 2 small containers. Place shrimp in 2 microwave-safe storage containers. Place toasted buns, tomatoes and lettuce in separate storage bags. Refrigerate up to 1 day. Continue with step 2.
