ingredients

  • 1 can Small Black Beans
  • 1 can Red Kidney Beans
  • 1 can Sweet Crisp Corn
  • 1 Green Pepper
  • 3/4 cup Celery (3 stalks)
  • 1/3 cup Olive Oil
  • 1/3 cup Apple Cider Vinegar
  • 1/4 cup Sugar
  • 1 1/2 Tablespoon Onion Onion Seasoning

Drain and rinse the beans and corn, place in large bowl. Add diced celery and green pepper. Sprinkle with sugar and stir the beans, corn, celery and green pepper. Add the Si Si Cilantro and Onion Onion seasoning to the olive oil and cider vinegar and stir until blended. Pour on top and gently mix. Let sit for 20 minutes. Stir before serving.

Rated 5 out of 5 by from Yummo Made this for my lunch today. Just tweaked it a little. Instead of olive oil I used TS avacado oil and cut up a fresh avacado when I ate it. Yum. New summer favorite for my work lunch. I’m a consultant who will be serving this at her tasting party next week
